Taste the flavors of fall with Duncan Hines



Much as I've enjoyed the summer, I have to admit the heat is wearing me down, and I'm excited about fall.  I'm looking forward to the cool, crisp, fall weather. I'm looking forward to jumping back into my new school job and seeing my friends from school. I'm looking forward to seeing those distinctive fall colors -- orange, yellow, russet, gold, caramel, red, and brown -- and tastes.  Caramel, cinnamon, apple, squash, pumpkin... yum!

To celebrate the flavors of fall, Duncan Hines is introducing two new delicious and easy products with on trend flavors and colors: Duncan Hines® Limited Edition Autumn Velvets cake mix and Caramel Apple Decadent cupcake mix. The new Duncan Hines Limited Edition Decadent Caramel Apple Cupcake mix (MSRP $3.29) includes everything you need to make a batch of yummy cupackes: apple cake mix, caramel frosting mix, and a pastry bag to fill and frost.  

Many times, following cake or cupcake mix directions straight out of the box results in a bland, boring finished product, but The Pea and her friends followed the basic recipe and ended up with a delicious, great-tasting cupcake!  The apple cake was so moist and tasty, and it went perfectly with the caramel frosting.  Personally I thought the frosting was a bit too sweet, but The Pea and her friends loved it so much, they devoured the whole batch in record time.




The Duncan Hines® Limited Edition Autumn Velvets cake mix is part of their new line of velvet cakes.  Like the Blue Velvet, Pink Velvet, and Spring Velvet cake mixes I reviewed earlier this year, the Autumn Velvet goes beyond the traditional velvet!  You get 2 mixes in each box: an orange velvet and a brown velvet. Neither tastes like a red velvet, but neither tastes like their color namesakes (orange or chocolate) either -- it's that light, fluffy texture that makes it similar to a red velvet cake. The colors are so pretty, just perfect for making a fall layer cake for football tailgates, Halloween parties, or Thanksgiving dinner.

The mix tastes great just as it is, but we decided to get creative and make some biscotti.  We added pumpkin pie spice to both the orange and brown mixes, and we drizzled melted orange and white candy melts over the top to make it look pretty.  They tasted as great as they looked!

Autumn Spice Biscotti

Hands-On Tie: 20 Minutes
Total Time: 60 Minutes
Servings: 30 Biscotti

Ingredients:
1 package Duncan Hines Autumn Velvets Cake Mix
4 large eggs, divided
8 Tbsp. (1 stick) butter, softened and divided
½ cup all-purpose flour, divided
4 tsp. vanilla extract, divided
1 Tbsp. pumpkin pie spice, divided*
1 cup toasted chopped pecans, walnuts or almonds, divided**
1 container Duncan Hines Creamy Vanilla or Chocolate Icing, melted (optional)**

Baking Instructions:
1. Preheat oven to 350°F. Line a baking pan with parchment paper.
2. Combine Orange Velvet Cake mix with 2 eggs, 4 Tbsp. butter, ¼ cup flour, 2 tsp. vanilla extract and 1-1/2 tsp. pumpkin pie spice in a large bowl. Beat at low speed with electric mixer 30 seconds or until just moistened, scraping sides of bowl with rubber spatula. Continue beating at medium speed 2 minutes. Stir in ½ cup nuts. Dough will be thick. Repeat in separate large bowl with Brown Velvet Cake Mix.
3. Arrange each dough onto baking pan and with floured hands, pat each into 12”x4” logs.

4. Bake 40 minutes. Let cool slightly. Slice each log into ½-inch diagonal slices. Arrange slices on baking pan and bake an additional 20 minutes. Transfer to wire rack and cool completely.
5. Melt frosting in a microwave safe bowl on high for 20 seconds or until just melted. Drizzle on biscotti.

Notes:
* As a variation, use 2-teaspoon ground cinnamon and ¼ teaspoon allspice.
** We did not use any nuts!
*** Instead of melted frosting, we drizzled melted candy melts (with a bit of vegetable oil mixed it, to make it runny) on top of our biscotti.

Biggest Online Shopping Mistakes



Two weeks ago I shared my biggest online shopping mistake, and asked you to share yours. I had great time reading through all your stories! Not that I enjoyed your misery, of course, but you know how misery loves company, and it's somewhat comforting to know that you're not alone. Here are some of my "favorite" ones:

  • Ordering beauty products online from a less than reputable site. It turned out my order was an auto renewal program and I got charged bi weekly for new shipments. Who orders the same make up products bi weekly!?!

  • Pressing the "buy" button three times by accident. My card as charged three times, and I had to call the bank to resolve this issue.

  • Putting my social security number online with a purchase. I will never do that again.

  • Buying something on a site that was not secure. My cc info was stolen and a bunch of charges were racked up...I am more careful now!


My favorite one is by andie@multiplemama. None of my Savvy Shopping Tips could have prevented this one, and it's a classic:

  • I was once looking at jumpers on AMAZON and walked away from my computer. With three children aged three and under in the house. One of them ordered it with one click shopping that automatically accesses my credit card info. and it appeared at my door two days later. It took two weeks to figure out how it all happened!


Thanks to all my readers for being brave enough to admit your mistakes! Reading through all your stories really brings home the fact that it's all too easy for even the most intelligent, internet-savvy person to make an online purchase they regret.

Fortunately we have cards like American Express, which helps mitigate the negative effects of those mistakes. They offer protection against fraudulent purchases, and they even let cardmembers return items even though the merchant's return policy has expired (up to $300, up to 90 days). Even better, there are simple things you can do to help ensure that you don't end up making mistakes in the first place! Last week I shared some tips for savvy online shopping -- it's a post well worth reading, so you can avoid the kinds of experiences I mentioned earlier.

Fall Fashion Shopping with American Express

Now that the weather is getting colder, it's time to get out the fall clothes. I've discovered that some of my stuff is too worn, or too outdated, or just doesn't fit, so I face the "task" of updating my fall wardrobe. Here are five fall fashion items that I absolutely must get for myself before the last leaf falls!

Dr. Martens 1B60 boot (MSRP $149.95)

I already own a pair of warm boots, but I don't really like them -- and you already know the sad story of how I ended up with boots that don't fit. Everyone needs a pair of comfy, sturdy and stylish boots for the fall, so boots are my first order of business. I spotted these tall lace-up boots on a parent at our school, and I stalked her for a week, trying to read the label on the back, before asking her what they were. These 1B60 boots by Dr. Martens have all the legendary Dr. Martens comfort, but due to the extra-tall boot shaft, don't look as clunky as your typical Dr. Martens boot. Love that biker-chick vibe!


Lucky Charlie skinny cords (MSRP $69.50)
I need some skinny jeans to tuck my new boots into, and these cords by Lucky fit the bill. Or rather, they fit me, along with everyone else. How Lucky manages to make jeans and pants that fit and flatter almost anyone, I will never know. These cords are so soft, they feel like I've worn them forever, and the deep eggplant color is just right for fall.


Lucky Perforated Stud Belt (MSRP $59.50)
To finish off my biker-chick look, I chose this black belt (again, from Lucky Jeans) because I love how it's tough yet feminine. The leather is so soft, and the tiny metal studs really give it an attitude. It looks equally great accenting your waist over a tunic top, or threaded through your favorite pair of jeans.

When it comes to fall fashion, supporting a great cause is always in style. In honor of Breast Cancer Awareness month, I've resolved to wear something pink every day in October -- but this breast cancer awareness hooded tee by INC is so cute, I'd wear it any day of the year.


Epiphanie Stella bag (MSRP $164.99)
Epiphanie camera bags, with their just-right mix of stylish and practical, are all the rage for photographers and bloggers. I've wanted one for ages, but couldn't make up my mind which style to get -- until the Stella came along. The funky boho tassels, the metal accents and the soft leatherlike material are just right for the fall. Who cares if it's actually a camera bag -- I've found my perfect purse.


Of course, none of these finds would be fabulous if I ended up regretting my purchase and wasn't able to return it, or if I found myself with a bill for a $10,000 hotel stay in Vegas because I used my debit card over an unsecure connection. To help educate shoppers about making smart online shopping choices, I'm joining American Express in an Online Savvy Shopper series of posts. Last week, I shared one of my online shopping mistakes and how I could have avoided it. Today, along with all those fabulous finds, I'm also sharing some tips to make all your online shopping experiences safe and satisfying:


1) Spend within your means
Set yourself a budget and stick with it, so you buy only the items you need, or those you really, really want. Having a budget will help you avoid overbidding for auctions and save you the hassle of returning items you bought in the heat of the moment.

2) Compare prices
This is one of the best things about the internet: it only takes a minute to do a search and make sure you're paying a fair price.

3) Know how much you're going to pay
When you're comparing prices, look at the total cost. Don't forget to factor in sales tax and shipping costs -- sometimes a "sale" item might end up costing more than an regularly priced item with free shipping.

4) Know the return policy
Does the site accept merchandise returns? What are the terms? American Express card even lets cardmembers return items even though the merchant's return policy has expired (up to $300, up to 90 days).

5) Buy from a reputable site or dealer
When you buy auction items, check the seller's rating. Don't buy from any retailer who asks you to send your credit card information by mail -- or worse, your social security number. When in doubt, check the Better Business Bureau, and trust your gut: do you really want to buy from a site with the name cheapestlowwprizes.com?

6) Pay with a credit card
Hackers steal credit and debit card information all the time -- but debit cards don't offer purchase protection. Most credit cards let you dispute fraudulent charges, let you freeze your card when it has been lost or stolen, and notify you when they notice suspicious activity on your credit card (i.e. large international purchases).

7) Use a strong password
Creating an online account with an ecommerce site can be a real timesaver: you only have to enter your information once, you have a record of all your purchases. But if you're going to leave all that information, especially credit card information, you need to protect it with a secure password. And if you use mobile apps to shop on your mobile phone, make sure your phone is password protected as well.

8) Use a secure connection
It's amazing what hackers can do these days, so make sure the internet connection you use is as secure as possible. Never use a public computer (like a library computer) to make online purchases, and avoid using public wifi when making purchases on your laptop. Make sure your wi-fi connection at home is password protected. Most importantly, make sure the site you purchase from is using a secure http connection -- look for the "https" and the lock symbol on the address bar of your browser.

9) Check your statements
These days, it's way too easy to set your credit card account to "autopay", avoid all those late-payment fees and get one more task off your hands. But you should still check your bank and credit card statement at least once a month, so you don't get any nasty surprises.

Savvy Online Shopping with American Express

I love online shopping. You just can't beat the variety, the prices and the convenience. As recently as twenty years ago, who would have thought that you could enter the world's largest department store just by turning on your computer, then buy anything and have it delivered straight to your home with a mere click of a button!

Of course, it's important to remember that as simple as it is to shop online, you're still spending your real, hard-earned money. And just like you would guard your wallet in a department store, you need to be safe and savvy when you shop online.

To help educate shoppers about making smart online shopping choices, I'm joining American Express in an Online Savvy Shopper series of posts. For starters, I'm sharing one of my online shopping mistakes below, and reflecting on what I could have done to avoid it:


Be familiar with the site's return policy
Last summer I bought a pair of sheepskin boots online. Since the weather had not yet grown cooler when they arrived, I tried them on once and stashed them in my closet. Once fall had arrived, I started wearing them -- but it only took a couple of uses for me to realize that I should have ordered a size up, because every time I wore them, the boots rubbed my heels raw. Unfortunately, the return period had already expired, so I was stuck with them. Now I have to wear them with socks. I should have made sure they fit properly before the return period was up -- or paid for them with an American Express card, which lets cardmembers return items even though the merchant's return policy has expired (up to $300, up to 90 days).



Buy from a site you know and trust
In hindsight, I should have bought those boots from Zappos or one of my regular online shoe sites with free shipping and returns and a 365-day return policy. I was drawn in by the lower price -- so instead of spending $20 more from an online store with a good reputation, I've wasted $120 on boots that don't fit!

Use a credit card, not a debit card, when making purchases online.
The worst kind of online shopping mistake is the kind you didn't even make. Hackers steal credit and debit card information all the time -- but debit cards don't offer purchase protection. Fortunately I've never had to learn this lesson the hard way, since I always use a credit card when shopping online. I've had to report fraudulent online charges several times -- for a subscription to a "How to Make Money From Home" website, for domain name registration, even for online gaming! -- but since the hackers used my credit card, I was able to get the purchases taken off my bill.

Ralph Lauren Adelle pants


Now that I've got an actual job, I need to get started on updating my work wardrobe. Fortunately, I work from home, so I can still spend most days in tees, jeans and sweats, but I do attend a fair amount of events these days (plus my employer's office happens to be about 40 miles from where I live, so I guess I'll have to put in an appearance one of these days), so I do need some clothing that makes me look like a professional who knows what she's doing. And no, those wide-hipped, tight-cuffed black trouser pants I wore 15 years ago don't count.

Fortunately I happen to be a Ralph Lauren Mombassador (thanks Mom Central for selecting me!), so they got me started on the road to my 21st century working mom wardrobe by sending me a pair of Ralph Lauren Adelle pants to review.


The Basics
Here's a description of the Adelle pant:
The Adelle pant channels sophisticated elegance in a classic silhouette with a hint of stretch and a sleek straight leg. * Medium low-rise belted waist. Zip fly with elongated buttoned-tab closure and interior button closure. * Flat front, straight leg. * Angled hand pockets, welt pocket at back right. Back shaping darts for a smooth silhouette. * 32 1/2" inseam. * 63% polyester, 32% viscose, 5% elastane. Lining: 100% acetate. Machine washable. Imported. * Price: $99.50

The Bongga
This is everything I want in a tailored pant. First off, they feel so comfortable, with that hint of stretch, that I could almost be wearing my ratty old sweats. Second, I don't need to iron them. Third, I think $99.50 is a great price, certainly comparable with other upscale RTW brands, and amazing for Ralph Lauren. Best of all? They're machine washable! I can just wash them on cold and not have to spend a fortune on dry cleaning. No, actually, best of all is how they look:
I don't usually wear my shirts tucked into my pants, but somehow these pants give me the confidence tuck it in and show it off.....

The Blah
Even though I think they look great, the fit is slightly off for me. I have big, ummm, curvy legs and hips, so a size 12 fits those bits of me just right -- but the waistline is slightly loose. Perhaps a different style would have suited me better? Or even better, perhaps I needed the next size down? The fit does seem much looser on me than on the model....

Halloween Chills and Thrills at the Disneyland Resort




I was told that Fall is a special time at the Disneyland Resort, and now I know first-hand that it's true. Disney works their magic on Disneyland to transform it into a pumpkin-filled, haunted paradise, with special decor and attractions themed to the season. * Even before you enter the park, you know it's Halloween Time at Disneyland. Check out this gigantic pumpkin Mickey!

* Main Street, U.S.A. in Disneyland is all dressed up for fall, with over 300 pumpkins displayed in shop windows and on balconies. Look closely, because no two are the same. The buildings are festooned in orange and yellow bunting, and each lamp post has a Mickey pumpkin arrangement. It's absolutely gorgeous!

* Big Thunder Ranch looks like an autumn wonderland, all decked out in all the beautiful colors of fall. The stage is filled with pumpkins, vines and fall leaves, and there are scarecrows and jack-o-lanterns galore.



* Special Halloween characters and Disney villains have come out for Halloween! There was a mob around Jack Skellington and Sally at New Orleans Square, and we saw guests lining up near It's a Small World in Fantasyland for Malificent and Jafar. And at the mom blogger event we had a special treat: we got to meet Cruela de Vil and Snow White's Evil Stepmother!

* Rancho del Zocalo in Frontierland is decorated with traditional skeleton figures in honor of Dia de los Muertos/Day of the Dead; they'll be on display until Nov. 2.


Special Halloween rice krispie treat
* Look for Halloween treats around the park, including Zero's Ghostly Ghoulash and Halloween-themed rice krispie treats! I was hoping there would be Halloween-themed napkins similar to the holiday ones, but I'll have to be content with paper popcorn boxes with Halloween prints.

* Shops throughout the Disneyland Resort are selling Halloween-themed merchandise, from jack-o-lantern mouse ears to Halloween costumes to trick-or-treat bags to Halloween-themed pins, shirts and hats.


Tower of Terror
* The Twilight Zone™ Tower of Terror at Disney California Adventure (DCA) park offers spooky fun any time of the year. We had an unexpected surprise when our family was chosen to open DCA on Sept. 19, which meant we got an elevator ride on the Tower of Terror all to ourselves!

* The Haunted Mansion has been decorated for Halloween/Christmas, inspired by The Nightmare before Christmas (where the 2 holidays collide). I haven't been to the Haunted Mansion in about 15 years, and I've never experienced Haunted Mansion Holiday, and the rest of my family has never been to the Haunted Mansion at all --so it was an amazing experience. The decorations outside the mansion are gorgeous. Every aspect of the Haunted Mansion ride has been redone, from the ghostly holiday portraits to the Santa hats on all the ghosts to the music to the gingerbread haunted house display in the haunted party ballroom to the holiday ghouls that travel home with you on the way out. I think we might be spoiled now for the regular Haunted Mansion. How can anything be as spectacular as this?

* Space Mountain has been themed for Halloween with images of spooky ghosts projected alongside the stars and comets that you see on the ride. My favorite one is the 3D-like projection of a ghostly hand that reaches out to grab you, just before the track dips down, so it feels like the hand just missed you. And there's a creepy eyeball that seems to follow your every move. It's so much fun! Parents of younger kids, beware -- this one really might be scary to them. Jammy has ridden Space Mountain many times, but after 1 ride on Space Mountain Ghost Galaxy, he freaked out at the ghosts and refused to ride it again (he says he'll go back when the ghosts are taken out of the ride).


Halloween Time at Disney is truly a remarkable experience, and with the cool weather and smaller crowds, it just might be the best time of the year to visit. Catch the magic now before it goes away!
